Nicole's Flapjack

Nicole's Fast Flapjacks makes 24
Take care not to overbake as they become hard and dark!

• 225g butter, salted or unsalted (if I am making for fete I use marg)

Elderflower cordial

• 3 pints water
• 3 lbs sugar
• 3 lemons
• 1 orange
• 25 elderflower heads
• 50 g citric acid

Boil the water and sugar to make a syrup. Then add lemons, orange and flowerheads and citric acid and leave to infuse in cool place f

Pineapple Salsa

• 2 limes
• 1 ripe pineapple (rind removed), cored and coarsely chopped
• 1 cup loosely packed fresh coriander leaves, chopped
• 1 chile, seeded and minced
• 1 spring onion
• 1 teaspoon sugar
• 1/4 teaspoon salt

Noodle Salad

• 100g medium egg noodles
• 75g sugar snap peas
• 100g beansprouts
• 3 spring onions
• 1 red pepper, seeded and finely chopped

For dressing

• 1 teaspoon finely chopped root ginger
• 2 teaspoon sesame oil
• 2 tablespoons sunflower oil
• 1 tablespoon light soy sauce
• 2 teaspoon cider vinegar
• 1/2 teaspoon clear honey

Granola flapjacks

• 1 1/4 cups Granola
• 3/4 cup oats
• 1/4 cup honey
• 6 tbl spn brown sugar
• 3/4 cup butter
• 2/3 cup chopped dates
